The PHI is the amount of time you need to wait between applying any pesticide product and harvesting your edible crop. PHIs vary depending on the crop and the product involved.

For homegrown bell peppers or head lettuce, allow 7 days. If you're treating root vegetables, like carrots or sweet potatoes, your PHI is 21 days. For tomatoes, one day's wait is long enough.
